Victoria and Kevin Schaefer created Pedal Ranch in 2002. It was born from a desire to bring all their favorite things Ð biking, running, cooking and entertaining Ð to the highest standards they could imagine.
Kevin brings years of serious bike riding experience to Pedal Ranch. He has participated in numerous organized rides and excels in the sport. Kevin is also a marathon runner. "Anyone can run or ride. You just take it at your own pace. I can help you achieve your goals."
Victoria has studied cooking with some of the most celebrated chefs in America. ÒI cook healthy food but I believe in meals that you can savor. A little bit of fat is required in your diet and I make sure to put it to the best use.Ó
Victoria and Kevin both had careers in television before opening Pedal Ranch. They spend their leisure time biking and exploring.
